According to an old recipe from the Privernese area, peppers are harvested at the height of ripeness: when their color becomes uniformly yellow and red. They must have a high consistency and be fleshy and sweet. Only whole peppers are washed, removed from the seeds and then cut into small pieces by hand, blanched in water with wine vinegar and salt and potted with capers and parsley; finally, filled with extra virgin olive oil. The product is combined, as a side dish, with meat dishes, to enrich salads with fresh vegetables or to accompany tasty appetizers.
