The extra virgin olive oil ” Colline Pontine ” PDO is obtained from the ” Itrana ” varieties ( from 50% to 100 % ) , ” Frantoio ” and ” Leccino ” ( up to 50% ) . They may also be present other varieties of olives ( maximum 10 % ) , provided that do not modify the characteristics of the product .
The Itrana is a cultivar of the original olive and typical of the territory of the province of Latina , which produces fruit that can be used to produce both table olives , and extra virgin olive oil . It ‘ also known as ” Oliva di Gaeta ” , ” Oliva Grossa ” , ” Trana ” and ” Esperia ” , and has the absolute dominance in the oil producing area extra virgin olive oil Colline Pontine DOP , constituting itself the 70 % of the cultivated plants .
